chicken & black bean soup

Ingredients

    2 tsp. olive oil
    1 yellow onion, diced
    1.5 lb. chicken breast, no skin or bones
    1 large carrot, gratted
    2 cloves garlic, minced
    1 jalapeno pepper, chopped with seeds
    8 cups chicken broth
    2 tsp. thyme
    1 tsp. oregano
    15 oz. can black beans, drained
    1 tomato, diced
    6 cups baby spinach


Directions

heat oil in large stock pot. add onions, cook until translucent. put in diced chicken and cook until no longer pink. add next 6 ingredients, bring to a boil. add beans, tomato, spinach, bring to boil again. remove from heat. season to taste with salt and pepper. may also sprinkle with parmesan cheese. makes 7 1-cup servings
