Schwinner's Spicy White Chicken Chili

Very high protein, high fiber, kickin' chicken chili! Very high protein, high fiber, kickin' chicken chili!Number of Servings: 6
Ingredients

1 lb. ground chicken
1 med. onion, chopped
1 yellow bell pepper, chopped
4 tomatillos, diced
1 jalepeno pepper
1 habanero pepper
1 can garbanzo beans, rinsed
1 can cannellini beans (white kidney), rinsed
1 can great northern beans, rinsed
4 cans reduced sodium chicken broth
1 tbsp. cumin
chili powder
salt & pepper
Directions
Brown chicken in a skillet with the onion and hot peppers. Add salt, pepper, cumin, and chili powder to taste.
Add chicken broth, peppers, tomatillos, and beans. Bring to a boil, then reduce heat and simmer for 30-60 minutes. I usually let it simmer for at least an hour to let all the ingredients blend.
Optional: add 1/4 c. whole wheat flour to help thicken the broth if you like.
Makes 6 big servings. Tastes even better the next day!
