Slow Cooker Shepherd's Pie

Introduction

Great dish for evenings when people coming and going at different times. Leave the slow cooker on Low/Warm and let people help themselves. Number of Servings: 6

Ingredients

    1 Tbsp canola oil
    1 lb lean ground beef
    2 large onions finely chopped
    100g carrots diced
    1 red bell pepper, diced
    4 garlic cloves, minced
    2 tsp paprika
    1/2 tsp salt
    1/2 tsp gound black pepper
    2 tbsp all purpose flour
    1 cup beef bouillon
    2 tbsp tomato paste
    1 can sweet corn, drained
    750g mashed potatoes
    1/4 cup shredded cheddar cheese

Directions

1. In a skillet, heat oil over medium high. Brown ground beef breaking up with a spoon. Transfer to crock pot using slotted spoon Drain off liquid

2. Reduce heat to medium. Add onions and carrots and cook for a couple of minutes then add garlic, red pepper, paprika, salt and pepper and cook, stirring, for 1 minute. Add broth and tomato paste, stir to combine and cook stirring until thickened
3. Stir in sweet corn and transfer to crock pot. Spread mashed potato over the top and sprinkle with the cheese, cover, cook on low for 4 to 6 hours or on high for 3 to 4 hours, until hot and bubbly.

Serve with large tossed salad or green vegetables of choice.
