Crab-stuffed Cucumber

Ingredients

    3/4 cup flaked cooked crabmeat
    2 tbls finely chopped red bell pepper
    2 tbls finely chopped scallions
    3 tbls nonfat or light mayonnaise
    1/4 tsp dried dill
    pinch ground white pepper
    2 medium cucumbers

Directions

makes 14 appetizers

Combine the crabmeat, red bell peper and scallions in a small bowl, toss to mix well. Add the mayonnaise, dill and white pepper stir to mix well. cover and refrigerate for at least 1 hour.

Peel the cucumbers and cut them into 3/4 inch thick slices. Scoop out te seeds, leaving a 1/4 inch thick sell covering the bottom. Fill the cucumber with a tablespoon of the crab mixture. Serve immediately.
