Introduction

Note: I make the muffins and the cake at the same time, because the kids love the muffins.

Number of Servings: 30

Ingredients

    * Egg, fresh, 4 extra large
    * Vanilla Extract, 3 tsp
    * Orange Juice, 4 fl oz
    * Orange or Lemon Peel
    * Baking Powder, 3.50 tsp
    * Flour, white, 2 cup
    * *Yogurt, Yoplait Light, Strawberry, 12 oz
    * I Can't Believe It's Not Butter, Light Spread (Soft) 6 serving (1 Tbsp is one serving)
    * *Splenda Sugar Blend for Baking, 96 tsp or 2 cups
    * Baking Soda, 1/4tsp
    * Salt, 1/4tsp
    * Oats, 2/3cup

Directions

1. Preheat oven to 350°F In large bowl, cream butter until fluffy. Beat in sugar until mixture is light and fluffy, 5 to 8 minutes. Beat in eggs one at a time. Stir or sift together flour, baking soda, baking powder and salt . In separate bowl, stir together yogurt, orange juice,Vanilla Extract and orange or lemon rind. Mix 1/3 of the dry ingredients into batter; add the yogurt mixture. Stir in dry ingredients.
Pour into well-greased and floured deep 9 or 10 inch tube or bundth pan; smooth top and tap pan lightly on work surface to remove air bubbles. Bake for 45 to 55minutes or until tester inserted in center comes out clean and cake is well-risen.
Let cool for 15 minutes. Dust with icing sugar.

I use less sugar and replace Butter with Country Crock Plus Calcium & Vitamins (Soft).
