Introduction

my local coop sells the most delicious seitan chicken salad, and i cant get enough! so in order to not go broke and gain tons weight (theirs is SWIMMING in vegenaise), i decided to make my own, modified version. my local coop sells the most delicious seitan chicken salad, and i cant get enough! so in order to not go broke and gain tons weight (theirs is SWIMMING in vegenaise), i decided to make my own, modified version.
Number of Servings: 5

Ingredients

    dressing:
    6 T vegenaise
    1 T pickle relish
    1 t powdered chicken or veggie base
    2 t mustard
    pinch salt and pepper

    salad:
    1 box westsoy traditional seitan (cut into smaller chunks)
    1 c shredded carrot
    2 medium stalks celery, chopped
    4 scallions, chopped

Directions

makes about 5 1/2-cup servings

mix salad ingredients together, add dressing, mix more, and enjoy! i prefer pairing it with some of the best multigrain bread ive ever had.
