No Guilt Pizza

Introduction

This makes a ton of pizza. You can add fresh veggies or pepperoni. What a wonderful substitute for a traditional crust. My family has been enjoying this for years. This makes a ton of pizza. You can add fresh veggies or pepperoni. What a wonderful substitute for a traditional crust. My family has been enjoying this for years.
Number of Servings: 4

Ingredients

    1 eggplant peeled and sliced 1/4 to 1/2 inch thick
    2 beaten egg whites
    garlic powder
    italian seasoning
    salt and pepper to taste
    4 oz. grated or shredded parm
    1 cup you favorite tomato based sauce
    1 cup shredded skim mozz

Directions

Preheat oven to 375. Peel and slice eggplant into rounds 1/4 to 12 inch thick. Mix all seasonings with parm. Dip slice of eggplant into egg white, then into parm mixture. Place on a baking that has been sprayed with cooking spray. bake until golden brown. Take out of oven top with sauce and cheese and any other toppings you enjoy. bake until cheese is melted. Total cooking time is about 30 minutes. Serves 4 very hungry people.
