Add it to a salad with light dressing for a great filling meal.

Number of Servings: 4

Ingredients

    Flax Seed Meal, 2 tbsp
    Chicken Breast, no skin, 12 ounces (about 2 large, cut into strips)
    Egg substitute, liquid (Egg Beaters), 0.25 cup
    Fiber One Cereal, .5 cup (1 serving)
    Pepper, red or cayenne, .5 tsp
    Cinnamon, ground, 1 tsp
    Salt, 1 dash
    Garlic powder, .5 tsp

Directions

Preheat oven to 400F. Spray rack or shallow baking dish with non stick coating. Crush spices and cereal together (I use my magic bullet) and pour into shallow dish or pie pan. Pour egg beaters into another shallow dish or pie pan. Rinse chicken and cut into strips. Dips strips into egg and then roll in cereal mixture to coat. Place in single layer on baking dish. Bake until chicken is no longer pink in the middle.
