Tapioca Brulee

Introduction

Number of Servings: 4

Ingredients

    8 cups water
    2/3 cup tapioca
    1/2 tsp salt
    3 Tbsp sugar
    2 cups skim milk
    6 Tbsp sugar
    1 egg
    1 cup raspberries
    4 tsp brown sugar

Directions

Boil water, 3 Tbsp sugar and salt. Add tapioca. Cook for 30 - 50 minutes depending on size of tapioca. It needs to be completely translucent.
Strain.
Combine milk, sugar and tapioca. Heat gently for approx 5 minutes. Whisk in egg. Stir over medium heat until thickens and comes to boil.
Cool
Line 4 ramekins with raspberries. Top with tapioca mixture. Sprinkle brown sugar on top.
Preheat broiler. Broil until brown sugar melts and bubbles.
