Meringue Cookies

Introduction

Low fat, low calorie treat! Satisfies when you need that sweet crunch of a cookie :) Low fat, low calorie treat! Satisfies when you need that sweet crunch of a cookie :)
Number of Servings: 36

Ingredients

    2 egg whites
    pinch of salt
    1/2 t. cream of tartar
    3/4 c. sugar
    1/2 c. chocolate chips
    1/2 c. chopped pecans

Directions

Preheat oven to 400 degrees. Make sure you have two racks evenly spaced near the top and middle. Using whisk attachment, beat 2 egg whites and pinch of salt until frothy. Continue beating as you slowly add sugar and cream of tartar. Beat until glossy and stiff. Fold in chocolate chips and chopped pecans. Drop by Tablespoons onto greased cookie sheets. Place in preheated oven and TURN OFF the oven. Leave undisturbed for at least 4 hours (overnight is better). Makes 3 dozen.
