Mini Omelets

Ingredients

    1.5 cups frozen shredded hash browns
    .25 cup shredded cheddar cheese
    1 cup chopped green pepper
    1 cup chopped onion
    4 slices canadian bacon (68 grams)
    7 large eggs
    .75 cup Liquid egg white

Directions

Makes 12 servings (1 muffin cup = 1 serving)

Preheat the oven to 350 degrees. Saute the onion and peppers in a pan (use oil spray). Meanwhile, spray muffin cups with oil spray. Press the hash browns equally into each cup (about 1/8 cup in each). In a bowl, beat the eggs and egg white together. Add the shredded cheese to egg mixture. Chop the canadian bacon and place in the egg mixture. After the onion and peppers are sauteed (onions are translucent), press the onion and peppers into each muffin cup equally. Then pour/spoon the egg mixture into each cup equally. Each muffin cup should be filled to the top. Bake in the oven for approx. 25 minutes.

Great for breakfast on the go! Reheat in microwave if desired.
