This is a good and quick recipe. It only takes around fifteen minutes to make if you haven't already cooked the rice, and even less if you already have. A good option for lunch or dinner, it incorporates a good carbohydrate, protein, vegetable, and healthy fat in one food. This is a good and quick recipe. Ingredients

    1. 1/2 cup brown rice, cooked
    2. 4 oz. chicken breast, skin removed, baked or grilled
    3. 1/2 cup black beans
    4. 1/2 cup tomato sauce
    5. 1 tbsp. olive oil (optional)

Directions

(I usually make this recipe for lunch using leftover grilled chicken from dinner the night before - just a suggestion.) Cook the brown rice and chicken. Microwave tomato sauce for 40 seconds on high. Mix all ingredients in bowl and serve. Makes 1 serving.
