Chicken strawberry salad

Introduction

Made with fresh strawberries, unsalted cashews, crumble goat cheese and chicken, you can substitute the strawberries with dried canberries or fresh mango and the cashew with pecans. It's moist enough without any salad dressing. I like it as is or with a fig balsamic vinegar and oil, or with a raspberry dressing. Number of Servings: 1

Ingredients

    2 cups of Fresh herb salad (mixed greens)
    2 oz of crumbled goat cheese (semi soft)
    4 large straberries
    5 or 6 unsalted cashew nuts
    a few slices of red onion
    3 ounces of cooked chicken breast (no skin)

Directions

Makes one serving (about 2 cups).
Wash the mixed greens and put in a bowl.
Add the goat cheese and the cashew nuts.
Cut the slices of onion in small pieces and add to the salad mix.
Cut the strawberries in quarters and add to the salad mix.
Top the salad mix with big pieces of the cooked chicken breast.
Note: This salad has enough moisture and doesn't need any dressing. If preferred, you can add balsamic vinegar and olive oil to taste.
Note #2; to add more fiber, I sometimes add one teaspoon of ground flaxseed, or salba.
