Stuffed Grape Leaves

Introduction

So Exotic... the grape leaves are excellent source of fibre adn vitamin A. It is also an antioxidant. Adding this recipe to your calendar is sure to chase away boredom! So Exotic... the grape leaves are excellent source of fibre adn vitamin A. It is also an antioxidant. Adding this recipe to your calendar is sure to chase away boredom!
Number of Servings: 5

Ingredients

    25 Grape leaves
    2 cups of rice (basmati or brown rice)
    2 cups chopped celery
    1/2 cup chopped mushrooms
    1 cup Yves vegie ground
    2 Tbs Olive Oil
    1 tsp garam massala
    2-3 tbs slivered almonds
    1/4 tsp cinnamon, allspice, nutmeg
    salt

Directions

Soak rice in 2 cups water.
Wash, remove stem and boil grape leaves for 3 minutes
Mix the remaining ingredients in a wok and cook till soft.
Add rice to the celery mixture, retain the water for later use.
Stuff the leaves with the mixture.
Lay all grape leaf rolls in a rice maker or pot with tight fitting lid.
Add the remaining water from soaking, and 2 more cups to the rolls.
You may need to lay a lid or heavy pottery on your rolls to prevent them from foating up.
Cook as you would rice till done.
Serve with yogurt and finely chopped chillis.
