Yellow Rice

Introduction

This is made with 1 TBS. of Annatto Seed (Anchiote) which was not in the tracker. Serve this with Mexican Vegetables and Pinto Beans. This is made with 1 TBS. of Annatto Seed (Anchiote) which was not in the tracker. Serve this with Mexican Vegetables and Pinto Beans.
Number of Servings: 11

Ingredients

    3 3/4 cups water
    1 1/2 cup DRY brown rice(yields 5.5cups)
    1 TBS. Annatto Seed

Directions

Makes 11 half cup servings.

Wrap seeds in cheesecloth or, I use a tea egg.
Put water, rice and tea egg in pot.
Cover and place over high heat.
After it boils, reduce heat to low. Cook for 40-45 minutes, till rice tender or water absorbed.
