Rebel Ghee

Introduction

Milk Protein is my kryptonite so I don't use the traditional method of waiting for the butter to cook out the protein. Also I have foreign markets near by that sell Ghee they do use a clove of cloves to flavor their Ghee which I don't care for. Number of Servings: 32

Ingredients

    1 lb butter
    (buy it on 2 for one sale and do bulk)
    water

Directions

Fill the pot with water about 2/3 full to fill large pot with room for butter. Bring to a simmer not a boil. Add the Butter leave on low heat for a while to get all the protein out of fat and into water. Water should be cloudy. At this point let it cool. When cool put in fridge overnight until hard and you can break it up in a layer. Add this butter fat to a fry pan on low and now follow the traditional method of slow cooking until free of moisture. I will be a lovely soft yellow. (I have browned my Ghee with the traditional method). Now you pour into a container and keep ready for use at room temp.
To flavor butter add to the boiling process.
