Introduction

Ingredients

    1 Box Spice Cake Mix
    1 15 oz. Can Pure Pumpkin
    1 Cup of Water

Tips

For Valentine's Day, bake in a heart-shaped muffin tin.

Directions

Mix together one box of spice cake mix, 1 cup of water, and 1 can of pumpkin. It may help to mix the water into the mix before adding the pumpkin. Transfer batter to a muffin tin. Bake 18 - 21 minutes or as directed on the spice cake mix box. Makes 24 muffins/cupcakes.

    I love these muffins, but make them slightly different. I use 1/2 cup water and 1/2 cup nonfat milk and add 1 egg. It doesn't change the calorie count all that much, but the egg improves the texture. - 3/29/08

    I've been making these for years in the form of cookies. I simply mix a can of pumpkin with a spice cake mix. Drop one tablespoon at a time onto a baking stone and cook 15 minutes. My whole family loves them. Sometimes I'll add a few chopped nuts if we're in the mood for more texture. - 2/1/10

    This is a great recipe - I modified it slightyl with 1/2c water and 1/2c natural applesauce - they came out perfectly moist and were a big hit at the family b-day party - I already have requests to make more! - 10/9/08

    These were filling and pretty nutritious since I needed something I could grab and go. They were easy to make, too! Personally, I think that you should rate the recipes based on taste and nutritional value and keep your opinion on "instant stuff" to yourself. Not all of us eat all-natural food. - 3/14/07

    I make these all the time. You can use any kind of cake mix. I especially like devil's food cake mix. Also, if you are one that likes frosting, use a tablespoon or 2 of no fat/low fat cool whip. YUMMY - 4/30/09

    I use one egg white for added protein as well as 1/2 shredded carrot and 3T chopped raisins. These are fablulous and all my kids and their friends love them and they are mostly healthy. I want to find an organic boxed spice cake mix to use instead of the regular brands. - 5/12/08

    So yummy! Added pumpkin spice and raisins and walnuts and a splash of soy milk. Very creamy texture, very tasty. New favorite :) I cooked them at 350 for closer to 35 minutes and they were perfect. - 7/2/12

    I have made these muffins for many years and had lost the recipe in a recent move. Was so thrilled to find it again. These are my family's favorite (especially the spice cake/pumpkin/pie spice variety), but we do like all the combinations that we have tried. YUM!! - 7/26/12

    Yummy. No spice cake mixes to be had in our local grocery so I used carrot cake mix. Then couldn't find my muffin tins so baked in 9X13 pan. It is very good! - 3/21/13

    I added half cup water and applesauce too. I make mini muffins, cool, freeze and place in ziploc bag. Toss some in lunch bag frozen and by time we get to work, school or gym, they are defrosted. People request them for gifts - 4/26/12

    I found a similar recipe recently, only it doesn't have the water. My family has enjoyed the muffins so much, and I am trying differnt cake flavors. Devil's Food cake mix turns out like brownie muffins! Will be making a new batch with Lemon cake tomorrow! - 4/23/12

    I love spice cake and pumpkin so this recipe was perfect for me! I read the comments and used 1/2 cup water, 1/2 cup milk and an egg. Next time I will use just water out of curiosity to see if I can tell a difference. They were Awesome!!! - 9/15/13

    I am a sucker for muffins and Pumpkin. Unfortunately, having 24 in my face at once is requiring some hefty will power. But, I've done it. I used 1 cup of the pumpkin and 1/3 cup non-sweetened applesauce. I think I'll take someone else tip and freeze some to get them out of sight :-) Wonderful! - 4/29/13

  • Just made these. The taste is SOO good!! Only downfall is that I cooked them for like 30/35mins or so, and the bottoms were soft and didn't come out of the paper cups good. BUT...the next day after they were completely cooled, they were GREAT and came out clean and tasty~ Whole family loved them! - 2/6/12

    Making these right now. Did 1/2 cup skim milk, 1/2 cup water, a few dashes of nutmeg, cinnamon, & pumpkin spice, and 1 egg white. Next time I will try to add flaxseed for extra fiber. They were VERY good. I like to eat them warmed (microwave 15 seconds) - 11/26/11

  • These are quite tasty and very light which is nice. I did make them into bars instead of muffins and used just over a half cup of water. I will make these again. You must make sure you bake them long enough. - 11/16/11

    My family loved this recipe once I tweaked it. We have more of a sweet tooth... I followed the recipe to the tee but added 1 tsp of pumpkin pie spice and 4 packets of Equal (the blue stuff). I also added a drop of food coloring to Fat Free Cool Whip and that became the icing! Delicious!! - 10/3/11

    Really easy and yummy! I've made it w/the 1/2 cup of water, 1/2 c skim milk and an egg and it was a little too moist. When I made it just with the 1c of water it was better. Now I am going to add raisins to my new batch so we will see! (My 6 year old even likes these as a yummy treat!) - 9/12/11

I added 3 Tbs. of chocolate chips, so it's just enough to randomly pop up in a muffin but won't set the calories back too much. Next time I'll add some additional pumpkin spice to up that pumpkin flavor. Also, 1 egg white. - 9/5/11

    I had to bake these a little longer than 21 minutes to get a good texture. I found it was still pretty "gooey" at 21 minutes. I also did 1/2 cup water, 1/2 cup skim milk and added one egg. - 10/14/10

    These were amazing! i added 1/2 c of water a light cinammon applesauce cup, 1c of chopped walnuts. i softened an 8oz package of fat free cream cheese and added cinnamon and a touch of splenda brown sugar. i dolloped cream cheese in center of each muffin and pushed it in then put in the oven! delish. - 9/18/10
