Introduction
I can't take credit for this recipe, as I found this on the message boards, but didn't see it posted here. These are delicious and healthy! I think they taste like pumpkin pie. Ingredients

1 Box Spice Cake Mix
1 15 oz. Can Pure Pumpkin
1 Cup of Water
Directions
Mix together one box of spice cake mix, 1 cup of water, and 1 can of pumpkin. It may help to mix the water into the mix before adding the pumpkin. Transfer batter to a muffin tin. Bake 18 - 21 minutes or as directed on the spice cake mix box. Makes 24 muffins/cupcakes.

These were filling and pretty nutritious since I needed something I could grab and go. They were easy to make, too! Personally, I think that you should rate the recipes based on taste and nutritional value and keep your opinion on "instant stuff" to yourself. Not all of us eat all-natural food. - 3/14/07

I am a sucker for muffins and Pumpkin. Unfortunately, having 24 in my face at once is requiring some hefty will power. But, I've done it. I used 1 cup of the pumpkin and 1/3 cup non-sweetened applesauce. I think I'll take someone else tip and freeze some to get them out of sight :-) Wonderful! - 4/29/13

Just made these. The taste is SOO good!! Only downfall is that I cooked them for like 30/35mins or so, and the bottoms were soft and didn't come out of the paper cups good. BUT...the next day after they were completely cooled, they were GREAT and came out clean and tasty~ Whole family loved them! - 2/6/12

I have made these a couple times and think they are so easy and delicious! I added 3 Tbs. of chocolate chips, so it's just enough to randomly pop up in a muffin but won't set the calories back too much. Next time I'll add some additional pumpkin spice to up that pumpkin flavor. Also, 1 egg white. - 9/5/11

These were amazing! i added 1/2 c of water a light cinammon applesauce cup, 1c of chopped walnuts. i softened an 8oz package of fat free cream cheese and added cinnamon and a touch of splenda brown sugar. i dolloped cream cheese in center of each muffin and pushed it in then put in the oven! delish. - 9/18/10
