Garden Soup

Number of Servings: 4

Ingredients

    Broth:
    3 stalks celery
    1/8 red onion
    1 Garlic clove
    1/4 cup lemon juice
    2 cups warm water
    1 tbsp. olive oil

    Veggies:
    1/2 cup chopped red pepper
    1 cup zucchini, grated
    1/2 cup cauliflower
    1/2 cup broccoli, chopped
    Cayenne or ginger for flavor
    Fresh parsley, cilantro, chives for garnish
    1 avocado

Directions

Blend the broth ingredients until smooth. Pour into large bowl. Add the vegetables to the broth, stir well. Add avocado, cut into bite-sized pieces. Adjust flavors by adding a little cayenne pepper or ginger. Garnish with parsley, cilantro, green onions and chives.
