Sometimes I tend not to get enough protein in. Here is a great dessert like recipe that you can eat at any meal or have for a snack--don't eat more than one piece a day. It is good so I freeze individual portions and get them out as I need them:

Sometimes I tend not to get enough protein in. Here is a great dessert like recipe that you can eat at any meal or have for a snack--don't eat more than one piece a day. It is good so I freeze individual portions and get them out as I need them:

Number of Servings: 10

Ingredients

    4 large eggs
    2 lbs ff ricotta cheese
    1 cup sugar substitute (I prefer wheylow--look for it at www.wheylow.com or splenda)
    1 tsp vanilla

    2 tablespoon lemon extract (sometimes I add some lemon juice and less lemon extract)

    2 tablespoon lemon rind (the yellow part only-the white part of the rind is bitter).

Directions

Beat all till creamy. Bake in preheated 350 degrees oven in springform pan (I put the pan on top of a cookie sheet sprayed with Pam as it tends to leak a little as it is cooking). Cool, remove from pan. Cut in individual pieces and freeze so you don't eat too much at once. It is quite yummy! Enjoy!
