1 medium zucchini
1 medium carrot
100g can sweet corn kernals(drained)
1/3 cup chopped onion
220g can tuna in spring water (drained)
3/4 cup very lean ham, chopped
1 cup cottage cheese
1/2 cup low fat grated tasty cheese
Grate zucchini, carrot and onion
Put in non stick pan and cook, gently 5 min until onion has softened.
Add drained sweet corn, drained tuna and ham
Mix well, cook 2 - 3 min
Turn into mixing bowl
In separate bowl mix eggs and cottage cheese
Mix egg mixture gently into tuna and ham mixture
Turn into flan dish that has been lightly sprayed with olive oil spray
Sprinkle with grated cheese
Cook in oven 30min or until browned and set.
Cool slightly before serving.
