Ingredients

    Feel free to add more or less olive oil as needed for your diet. The less olive oil you add, the more water you should add...and vice versa.

Directions

Slice the eggplant into 1/2 inch slices and roast in the oven for 1 hour, turning halfway. Eggplant will stick less to pan if you spray it with a little pam first. I don't peel the eggplant because I like the extra fiber that comes with the peel (and I can't taste it), but feel free to peel if desired. Once roasted and cooled, combine it with all of the other ingredients in a food processor and pulse for 1-2 minutes. Let the mixture rest for one hour in the fridge in order for the flavors to develop!
