Potato Salmon Latkes

Introduction

A great twist on a Jewish classic. Great way to include additional protein in your daily breakfast, as well. A great twist on a Jewish classic. Great way to include additional protein in your daily breakfast, as well.
Number of Servings: 12

Ingredients

    3 medium potatoes, shredded
    1-6 oz. can pink salmon
    1 large egg
    1 medium onion, chopped
    1 t. freshly-ground black pepper
    2 t. poultry/seafood seasoning

Directions

1. Grate potatoes. Squeez in layers of paper towel to remove excess moisture. Add to mixing bowl.

2. Add chopped onion, salmon, egg, pepper, and poultry/seafood seasoning to bowl. Mix thoroughly.

3. Drop 2 T. of mixture into nonstick pan sprayed with nonstick coating. Fry on each side for four minutes, until done & browned.

Makes about 12 latkes.
