Oatmeal Coconut Cookies

Introduction

1 cup of miniature semi sweet chocolate chips may be added for variation. (Not included in calory count). 1 cup of miniature semi sweet chocolate chips may be added for variation. (Not included in calory count).
Number of Servings: 48

Ingredients

    1 cup soft margarine
    1 cup sugar
    1 cup brown sugar
    2 eggs
    1 tsp vanilla
    2 cup flour
    1 tsp baking powder
    1 tsp baking soad
    1 tsp salt
    1 1/2 cup rolled oats
    1 cup coconut

Directions

1. Prehet oven to 350 F.
2. In a mixing bowl, cream together the margarine, sugar, & brown sugar.
3. Mix in the eggs and vanilla.
4. Combine the flour, baking powder, baking soda, & salt.. Stir into batter until well blended.
5. Mix in the oats and coconut until evenly distributed.
6. Drop by spoonfulls onto a greased cookie sheet about 2 inches apart.
7. Bake for 12 minutes or until edges are lightly browned.

Makes 48 cookies.
