Confetti Orzo

Ingredients

    16 oz orzo, uncooked
    4 T olive oil, divided
    1/4 c green onion, diced
    2 cloves garlic, minced
    1 c red bell pepper, diced
    1 c celery, diced
    1 t cumin
    4 c small broccoli florets, steamed
    salt and pepper to taste

Directions

In a large skillet, heat 1 T of olive oil on medium heat. Add 1 c of uncooked orzo and brown. Cook the remaining pasta with the borwned pasta according to package directions. Set aside. Using the sma eskillet, heat the remaining 3 T of live oil. Add green onion, garlic, red bell pepper, celery, cumin, salt and pepper. Cook until tender. Mix cooked pasta and broccoli in skillet and serve hot.
