IntroductionAbsolutely creamy, delicious and so filling! Absolutely creamy, delicious and so filling!
Vegetable cooking spray
1/2 chopped onion
2 cloves of garlic, minced
2 tablespoons of flour
4 cups vegetable stock
2 cups cauliflower florets
1 medium potato peeled and cubed
1 cup fat free half/half
1 cup cheddar cheese shredded
salt and pepper to taste
2. Add stock, cauliflower and potato, heat to boiling. Reduce heat and simmer, covered 10-15 minutes until vegetables are tender.
3. Remove about half the cauliflower with a slotted spoon and set aside. Puree remaining soup in food processor, blender or with smoothie mixer. Return soup to pan, stir in removed cauliflower, half and half and cheese. Cook over low heat until cheese is melted, season with salt and pepper to taste.
Yield approximately 3 servings (2 cups per serving).
Cut back even more on fat and calories by using reduced fat or fat free cheese.
