Introduction

Seasoned chicken and broccoli with a yogurt sauce, over rice Seasoned chicken and broccoli with a yogurt sauce, over rice
Number of Servings: 4

Ingredients

    3/4 pound chicken breast meat, cubed
    1-1/2 pounds broccoli, chopped
    white rice
    1/4 tsp ginger
    1/2 tsp coriander
    1 tsp cilantro
    1 tbsp soy sauce
    1 cup chicken broth
    1 cup low fat plain yogurt

Directions

cook diced chicken in 1 tbsp olive oil. add ginger, coriander and cilantro. Add chicken broth and broccoli. Cover and simmer for about 20 minutes. In the meantime, prepare rice in another pan. Just before serving, add soy sauce and yogurt, mix in. Serve over rice.
