Easy Chicken Fried Chicken

Introduction

Ingredients

    1 lb thin sliced bonless skinless chicken breast
    2 cups Progresso Garlic and Herb bread crumbs
    1 cup Shredded 3 cheese blend Parmesan, Asiago & Romano cheeses
    1 Cup Liquid egg whites
    1 cup 2% Milk
    1.5 TBSP Emerils Orginal Essence
    2 TBSP Emerils Bayou Blast
    Salt and pepper to taste
    Canola Oil

Directions

In medium bowl mix egg whites, milk, salt, pepper and Emerils Orignal essence. Mix well, add chicken breast and let soak. Next in a wide flat baking dish, mix breadcrumbs, cheese blend, salt, pepper, and Emerils Bayou Blast, mix well with fork. In a large skillet, add just enough oil to cover the bottom and go up the sides just a little bit, set stove to medium and allow oil to heat until bread crumbs put into oil fry and float to the top.

Take chicken one at a time from egg/milk mixture, let the excess drip off. Add chicken to bread crumb mixture, with a fork add bread crumb mixture to the top of the chicken breast and press down. Flip the chicken over and repeat. Set aside and repeat until all chicken breasts have been breaded. Dip chicken in Milk/egg mixture second time and back into bread crumb mixture repeating the breading process, do this with all chicken breasts. Check oil to make sure it is hot. Slowly place chicken in skillit. Fry until light brown and turn (about 2 minutes), once the other side is also light brown remove from skillit and drain on papertowls.
