Coconut Dream Soup

Ingredients

    0.5 cup coconut meat
    2 mint or kaffir lime leaf
    1/2 stalk celery
    1 tbsp chopped ginger root
    1 whole lime, without the peel

    Vegetable mix:
    0.25 cup snow peas, thinly sliced
    1/2 red pepper, cut into cubes
    2 spring onions, thinly sliced
    1/2 sheet nori, cut into strips
    Cilantro to taste

Directions

Mix the veggies in a bowl. Pour the soup into bowls through a fine mesh strainer to separate any "lumps" then top the bowl with a handful of the vegetable mix.
