IntroductionA simple pita pizza for buffalo wing lovers. My inspiration came from many other recipes that weren't quite "right" for my family's palate - I added the extra veggies and ranch dressing. A simple pita pizza for buffalo wing lovers. My inspiration came from many other recipes that weren't quite "right" for my family's palate - I added the extra veggies and ranch dressing.
1 lb chicken breast, skinless, trimmed
1 c hot sauce
1 c low fat cheddar or colby cheese
.5 c chopped onion
.25 c green peppers
8 tbsp fat free ranch
4 whole wheat pitas (6 inch wide)
1 c diced or chopped celery
1 tbsp olive oil (to cook chicken in)
Cut chicken into bite sized pieces, I find the finer the pieces, the easier to eat the pizza. Cook chicken in olive oil until no longer pink. Turn off heat, add the hot sauce (and any spices you might like - I used some garlic salt - just be wary of how it will change your nutrition information) and coat all chicken. Put 2 tbsp ranch on each pita. On top of the ranch place a quarter each of the onions, celery and peppers, followed by a quarter of the chicken mixture, then the cheese. Extra hot sauce may be drizzled over the pizzas if desired. Cook roughly 15 minutes, until the pita is desired crispness and the cheese is melted.
Note: This is a chicken heavy recipe. You could make up to 8 pita pizzas with this amount of chicken, simply double the other ingredients involved.
