2 large zucchini
8oz/250g cheddar cheese.
2 large eggs
1/2 cup of extra light virgin olive oil
2/3 cup non fat milk, you may need a little more
2 cups plain all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
Spray 12 cup muffin tray.
Beat with mixer eggs, oil and milk until smooth.
Turn mixer to lowest setting and add sieved flour, baking powder and salt. You may need a little extra milk
Stir in grated zucchini, cheese and slivered almonds.
Spoon batter into prepared muffin pan.
Bake unil well risen and springy to the touch approximately 20 minutes.
Let cool for a minute or two before turning out onto wire cooling tray.
