Savory Vegetable Casserole

Ingredients

    1 Med. to large White Potato, peeled
    1 Med. to large Sweet Potato, peeled
    1 Large Carrot
    1 Large Baby Zucchini
    2 T. Extra Light Olive Oil
    1 Large Tomato, very ripe
    1 c. Progresso Bread Crumbs, Italian-style

Directions

Preheat oven to 350 Degrees F. Wash all vegetables. Slice lengthwise: Potatoes, carrot and zucchini. In 9" X 13" casserole dish; layer white potato, sweet potato and carrot. Drizzle 1 T. of Olive Oil over all. Thinly slice onion and put on top. Drizzle 1 T. of Olive Oil on top. Next: arrange zucchini on top. Thinly slice ripe tomato and place on top of zucchini. Spread on parmesan cheese. Add bread crumbs. Bake for 90 minutes. (If bread crumbs start to get too brown, reduce oven temp to 325 degrees and cook an extra 10 minutes). Makes about 6 to 8 servings.
