IntroductionFun salad to shake up the old boring lettuce! And add more proteins or vegetables as you see fit. Fun salad to shake up the old boring lettuce! And add more proteins or vegetables as you see fit.
1 package of Ramen Noodles (oriental seasoning)
1 cup Napa cabbage
.25 cup red cabbage
.25 cup of thinly slice carrots
(or buy a premade coleslaw bag of these ingredients)
.25 cup dry roasted peanuts
1 Tbs sesame oil
Splash of lime juice
1 Tbs vinegar
Splenda (or sugar but calories not included)
Chop up the vegetables while the noodles are cooking.
Combine dressing ingredients and Ramen spice packet. Add water as needed and combine well (shake) to well to make dressing.
Plate with vegetables of the bottom, noodle nest in the middle and peanuts and dressing on top.
This recipie makes two servings, but it's easy to double it.
Add vegetables or protein as you see fit. Bell peppers, chicken and snap peas are my favorite adds!
