Massachusetts Cornbread Muffins

Introduction

Good to make ahead and freeze. This recipe is too sweet or us , most Texans don't eat it sweet. I leave out the sugar, with the honey it is just right. Comfort food with your soup or chili on a cool day.

Good to make ahead and freeze. This recipe is too sweet or us , most Texans don't eat it sweet. I leave out the sugar, with the honey it is just right. Comfort food with your soup or chili on a cool day.

Number of Servings: 24

Ingredients

    1/2 C honey
    2 whole eggs
    3 egg white
    1 3/4 C skim milk
    1/4 C veg. oil
    1/2 C sugar (optional)
    2 tbs baking powder
    3 1/2 C all purpose white flower
    1 C cornmeal
    1/4 tsp salt
    Nonstick veg spray

Directions

In large bowl whisk together honey, eggs, egg whites, milk and oil.
Add dry ingredients and mix with electric mixer at medium-high speed for 2min.
Spray muffin tins with nonstick cooking spray. Fill each cup 3/4 full.
Bake at 400 degrees for about 15 min. or until tops are golden brown.
Makes 24 muffins.
Adjust nutrition values if not using sugar...we don't like it that sweet.
I freeze these in zip lock take out as needed and warm in micro. about 10 seconds.
