Cheesy Roasted Cauliflower

Introduction

This is the ONLY way I can get my 4 yr old to eat her cauliflower & she comes back for seconds!! (Tho I cheat a bit & call them "Wall-E Flowers! LOL!) This is an excellent dish with lemon baked tilapia!
TIP: It's easy to coat up the cauliflower if you put everything into a zipper bag & give it a good shaking!

Number of Servings: 4

Ingredients

    1 large (6-7" dia) head cauliflower
    2 tbsp extra virgin oil oil (EVOO)
    1/2 c minced garlic (or less if you prefer)
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp chopped basil leaf
    dash (or more) fresh ground black pepper
    2 tbsp grated parmesan
    1/4 c fat free finely shredded sharp cheddar cheese

Directions

Preheat oven to 350 degrees.
While oven is heating, cut or pull cauliflower into flowerets, trying to keep pieces uniform in size.
Place all ingredients but cheddar cheese into a zipper seal bag & shake well to coat cauliflower.
Pour into a 9x9 casserole dish, place in center of oven & roast uncovered for 45 minutes or until the cauliflower is crisp-tender. Remove from oven, sprinkle shredded cheddar on top.
I like to use my broiler to melt the cheese until it's browned, tho I have served as written above when I'm in a hurry.
