IntroductionLow fat, high fibre - good for what ails you. Low fat, high fibre - good for what ails you.
1 cup white flour
1 tsp baking soda
1 tsp salt
2 cups wheat bran
2 tbsp flax seed meal
1 1/2 cups skim milk
1/2 cup dark honey (eg. buckwheat)
1 egg white
1/2 cup finely shredded carrot
2. In a separate bowl, combine all the dry ingredients.
3. Mix these two mixes together and add the carrots at the end if you are including them. Stir just till combined. The mixture will look rather soggy - this is okay.
4. Spoon into non-stick muffin tins and bake at 350F for 20 minutes.
