Butterbean Soup With Baby Bellas and Wild Rice

Ingredients

2 medium onions, diced
2 medium ribs of celery, diced
4 cloves of garlic, minced
6 cups of water
1 lb speckled butter beans or lima beans, fresh or frozen
6 oz baby bellas, sliced
1/4 cup wild rice, uncooked
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp sage
1/4 tsp black pepper
1 tsp low sodium soy sauce
Directions
Spray a large nonstick pot with canola or vegetable oil spray. Add onions and saute until they begin to brown. Add celery and garlic, cook another 2 minutes.
Add water and beans and bring to a boil. Add remaining ingredients, bring back to boil. Reduce heat and simmer until beans and rice are done, about 1 hour.
If necessary, thin soup with additional water while it cooks.
If a thicker broth is preferred, mash or blend 1/2 cup of beans and stir into soup just before serving
