Splenda Chocolate Chip Cookies - All Splenda

Introduction

I made these using all Splenda sugars, instead of the original Splenda recipe which calls for regular brown sugar.

Also switched out the butter for light butter (not margarine). You can switch out 2 eggs for 1/2 cup of egg beaters if you like, and you can also use 1 cup white flour and half a cup wheat flour if you like.

Results are cake-like cookies. Not like you might be used to, but wonderful none the less!

Ingredients

    2/3 cup light butter (Land O Lakes)
    1/3 cup Splenda Brown Sugar
    2/3 cup Splenda Granular Sweetener
    2 teaspoons vanilla
    2 eggs
    1 tsp baking soda
    1/4 tsp salt
    1 cup semi-sweet chocolate chips
    1.5 cup all purpose flour

Directions

One Cookie = One Serving

Cream butter, both Splenda sugars, and vanilla until creamy. Add eggs and beat well.

Add flour, baking soda and salt. Mix well until blended. Stir in chocolate chips.

Place level tablespoon of cookie dough on ungreased baking sheet. Bake 10-12 min until golden brown. Cool on pan for 3-4 minutes and move to wire rack. Makes 36-40.
