Chicken Mushroom Stew

Ingredients

    6 boneless, skinless chicken breast halves (about 1 1/2 lbs.), uncooked, cut in 1-in cubes
    2 Tbsp. cooking oil, divided
    8 ozs. sliced fresh mushrooms
    1 medium onion, diced
    3 cups diced zucchini
    1 cup diced green bell peppers
    4 garlic cloves, diced
    3 medium tomatoes, diced
    6-oz. can tomato paste
    3/4 cup water
    2 tsp. salt, optional
    1 tsp. dried thyme
    1 tsp. dried oregano
    1 tsp. dried marjoram
    1 tsp. dried basil

Directions

1. Brown chicken in 1 Tbsp. oil in a large skillet. Transfer to slow cooker, reserving drippings.
2. In same skillet, saute mushrooms, onions, zucchini, green peppers, and garlic in drippings, and remaining 1 Tbsp. oil if needed, until crisp-tender. Place in slow cooker.
3. Add tomatoes, tomato paste, water and seasonings.
4. Cover. Cook on Low 4 hours, or until vegetables are tender.

Makes: 6 Servings
Ideal Slow Cooker Size: 3 1/2 - 4 Quart

Tip: This is also good served over rice.
