1 can coconut milk (13.5 oz)
1 1/4 cups brown sugar
1 tsp vanilla
Beat eggs and sugar together with vanilla, add coconut milk.
Pour into baking dish or ramekins and place inside a roasting pan filled with water to halfway up the side of the baking dish. Bake for 45-60 minutes or until set. Cool and serve with fresh fruit.
