Flax oat muffins

Introduction

based on the free recipe on the back of Bobs Red Mill Organic Flaxseed Meal. based on the free recipe on the back of Bobs Red Mill Organic Flaxseed Meal.
Number of Servings: 16

Ingredients

    1 1/2 c unbleache flour
    3/4 c flaxseed meal
    3/4 c quick oats
    1c brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1/2 t salt
    1 tsp cinnamon
    1 1/2 carrots shredded fine
    2 apples peeled and shredded
    1c pecans chopped
    3/4 c milk
    2 eggs beaten
    1 tsp vanilla

Directions

Makes 16 muffins

PreHeat oven to 350

Mix flour, flax meal, oats, brown sugar, baking soda, banking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, and nuts. Combine milk, eggs, and vanilla. Pour liquid ingredients into dry ingredients. Stri until ingredients are moistened. Do not over mix. Fill greased muffin cups 3/4 full.
