Potato Salad ~ 2

Number of Servings: 6

Ingredients

    3 medium potatoes, peeled and cut into small pieces, about 1/2" cubed
    2 eggs
    1 large stalk celery, chopped
    1 medium carrot, thinly sliced
    1 medium onion, minced
    3/4 cup mayo
    1 1/2 tsp vinegar
    1 1/2 tsp mustard
    salt & pepper to taste

Directions

1. Cook potatoes until soft, drain & cool.
2. Bring eggs to a boil, turn off heat and let stand 18 minutes, run cold water over eggs untill cool, peel and chop.
3. In a large bowl combine all other ingredients while waiting fot the potatoes and eggs to cook.
4. When ready, add potatoes & eggs, mix, and cool in the fridge for 1 hour.
5. Serve cold.
Makes 6 servings.
