Chicken 'n' Spinach Pasta Bake

Ingredients

    8 oz uncooked rigatoni (Whole Wheat)
    1 T olive oil
    1 cup finely chopped onion (about 1 medium)
    1 10 oz pkg spinach, thawed
    3 cups cubed cooked chicken breasts
    4 oz low fat cream cheese
    1/2 t salt
    1/2 t pepper
    1 1/2 cups shredded mozzarella

Directions

Prepare rigatoni according to package directions
Sweat the onions in the olive oil
Spray a 13 x 9 pan with baking spray
Drain chopped spinach well
Stir rigatoni, spinach, chicken and onion and next 4 ingredients in a bowl.
Spoon mixture into baking dish and sprinkle with cheese.
Bake covered at 375 for 30 minutes, uncover and bake for 15 minutes.

  • The only thing I did differently was add broccoli since I didn't have a lot of spinach on hand, and I'd cut back on the onion next time, but it was very very good, and easy to make too! - 10/2/11

  • This recipe was so easy--I did the prep work and popped it in the oven with delay baking and it was done when we got home from soccer practice! I didn't have rigatoni noodles on hand so I used spagehetti noodles. Worked great. Thanks for the recipe! - 3/18/10
