Simply Rich Chicken Salad

Introduction

A packet of dry soup and dip mix easily adds extra flavor to this chicken salad, without adding too many extra calories. A packet of dry soup and dip mix easily adds extra flavor to this chicken salad, without adding too many extra calories.
Number of Servings: 8

Ingredients

    1.5 pounds chicken breast
    1 cup frozen chopped spinach
    1 oz dip mix - I use Mrs. Grass Homestyle Vegetable Recipe, Soup & Dip Mix
    2 cup Fat Free Miracle Whip
    3 celery stalks, chopped
    2 hardboiled eggs (optional)

Directions

1 - Boil and cube the chicken breast, and allow to cool.

2 - Thoroughly blend the Miracle Whip, spinach, and dip mix in a serving or storage bowl .

3 - Chop the celery stalks and eggs, then gently stir the celery, eggs, and chicken into the dip mix blend.

Serve over lettuce, on whole-grain bread, or in a pita pocket. Makes about 8 1/2 cup servings, the perfect amount for a sandwich or salad.
