This a sample of Turkish cuisine. It is delicious, easy to cook, and nutritious. You can eat it alone as a main dish, or serve with either meat or beans. It is also good with yogurt . Number of Servings: 6

Ingredients

    Onions, 1 large, chopped
    Green Bell Peppers , 1 large, chopped
    Canola Oil, 2 tbsp
    Red Ripe Tomatoes, 1 large, chopped
    Tomato Paste, 2 tbs
    Bulgur, dry, 1.5 cups
    Salt, 0.5 tsp
    Hot water, 3 cups

Directions

In a pan, pour canola oil, add onions and peppers. Saute them until they are soft.

In the meantime wash bulgur twice in cold water and drain well.

Next, add tomatoes into the pan. Saute for 2 minutes.

Add bulgur, tomato paste, salt and hot water into the pan. Cover the pan with lid. Cook slowly until bulgur is soft and all the water is absorbed.

If necesseray add more hot water.

  • Wow this is really good! I substituted fresh tomatoes for a can of fire roasted tomatoes (YUM!) and didn't use the tomato paste. I added roasted minced garlic and it added another level of flavor. It is incrediable!!!! - 3/1/11

  • I do this occasionally and I love it. I usually add garlic and omit the tomato and pepper. For a variety, I sometimes add frozen vegetables, or frozen peas. - 10/7/10
