Carrot and Aubergine SoupSubmitted by: JOINIK
1 tsp Olive Oil
1 Clove Garlic
1 Medium Onion
1 Red Pepper
1 Stock Cube
2 tsp Cornflour
Fry garlic and onion together until onion is soft.
Add Aubergine and Red Pepper.
Fry for a few minutes more.
Add the water the carrots were boiled in.
Leave to simmer for ten minutes.
Liquidise and add cornflour. Liquidise some more.
Season to taste.
Makes 500ml Soup or 3 Large Servings/ 5 Small Servings
