Taco Rice Salad

Ingredients

    1lb ground turkey
    1 garlic clove
    3 cups yellow rice
    1.25 teaspoon ground cumin
    2 teaspoon chili powder
    .25 teaspoon salt
    .25 teaspoon pepper
    6 cups romaine lettuce
    3 cups chopped tomatoes
    1 cup frozen corn, thawed
    1/2 cup chopped red onion
    (1) 15oz can of black beans (drained)
    2/3 cup fat free sour cream
    2/3 cup picante sauce
    1/2 reduced fat cheddar cheese


Directions

To prepare salad, heat non-stick skillet over medium-high heat; coat pan with cooking spray. Add turkey and garlic. cook until browned, stirring to crumble. Drain; return meat to pan. Stir in rice, cumin, chili pwder, salt and pepper. Place lettuce, tomato, corn, onion, and black beans in bowl; toss to combine. To make dressing, combine sour cream, picante sauce, chili powder (1 t.) and 1/2 t. ground cumin. toss with lettuce mixture. One serving equals 1 1/3 c. lettuce mixture, 3/4 c. rice mixture and 1 1/2 T. cheese
