Breakfast Potato

Introduction

A great way to use up leftover baked potatoes, or to get a different kind of carbohydrate in the mornings if you get bored of toast. A great way to use up leftover baked potatoes, or to get a different kind of carbohydrate in the mornings if you get bored of toast.

Ingredients

    1 potato (baked)
    1 egg
    1 slice of bacon
    1/4 c of cottage cheese (optional, can be substituted with another kind of grated or chopped up cheese)

Directions

If you have to bake the potato, the cooking time is about 50 min. This can be cut drastically if you bake it ahead of time or do it in the microwave
Start with a baked potato
Cut your potato in half and mash it into a bowl, if you're using a leftover potato, warm it in the microwave ~45 sec.
Sprinkle cheese on the potato.
Cook the bacon in a frying pan, when it's done chop it up into small pieces and sprinkle on top of the potato
Scramble the egg and put it on the potato
Enjoy!
