Introduction

This is an easy delicious way to have a nutritious roast that you can walk away from and live your life while it cooks. My family loves it and asks for it over and over. Number of Servings: 8

Ingredients

    2 lb top round roast trimmed of extra fat
    4 Tbsp lemon pepper marinade
    l large yellow onion (or Vidalia if you can find one)
    1 Tbsp paprika

Directions

Peel and slice onion into thick slices and cover bottom of baking dish with slices. Lay roast on top of onion and coat with lemon pepper marinade. Sprinkle paprika over meat. Tightly cover baking dish with tin foil and put in a 250 degree oven and walk away. Do not open foil until 2 hours are up. Roast should be done but you can put it back in if you are not ready for it for up to 2-3 more hours. Put a little hot water in dish if you think it might dry out, but this really isn't necessary if you seal the tin foil tightly. It should just fall apart (fork tender) when you put it on a platter. I serve it with greens and sweet potatoes.

  • Made this last night and my husband said his mom used to make something just like it but with round steak. It was pretty good with a nice flavor but was not fork tender. Needed a knife to cut. However, I cooked for only 2 hours and maybe should have cooked a little longer. Will try again. - 5/20/09
