1/2 Onion chopped (~0.5 C)
4 cloves garlic, chopped fine
1 small green pepper chopped
1 small red pepper chopped (both peppers should = ~ 1.25 C)
1 Summer Squash
1/2 Cup rice
1 3/4 C vegetable broth
1 - 14oz can Coconut Milk (Light will lower the calories)
Thai green curry paste (to taste)
Thai fish sauce (to taste)
24 medium shrimps (peeled and deveined)
Heat a little olive oil in a pan over medium heat and add rice. Cook until golden brown, then add onions and garlic. Saute a few minutes then add the rest of the veggies. Cook a few minutes.
Add thai green curry paste and stir until mixed in. Use to your own taste, it's spicy stuff!
Add coconut milk, broth and fish sauce. Lower heat to med-low, and simmer until rice is almost cooked. When the rice has cooked add the shrimp, stir in and cook thoroughly.
Serve with lime wedges.
