Dark Chocolate Chip Oatmeal Cookies

Ingredients

    /3 cup butter
    1/2 cup brown sugar
    2 TBSP + 2 tsp baking splenda
    1 egg
    1 tsp. vanilla extract
    1 cup white whole wheat flour
    1 tsp. baking soda
    3/4 tsp. salt
    1 tsp. cinnamon
    3/4 cup quick cooking oats
    1/2 cup dark chocolate chips

Directions

Preheat oven to 350 degrees. Beat butter and sugar and splenda with an electric mixer. Beat in egg and vanilla. In a medium mixing bowl, stir together flour, baking soda, salt and cinnamon. Stir flour mixture into sugar mixture until well combined. Stir in oats, then chocolate chips. Roll dough into walnut-sized balls and place 2 inches apart on ungreased cookie sheets. Bake 10-12 minutes.

Makes 30 cookies.

  • These were really good, just like my granny's cookies! They were a bit salty and I omitted a half tsp. I tried again and I used .75tsp of salt. That did the trick. Also, another thing I did was melt the butter before mixing it with the sugars. It makes the consistency perfect! - 3/20/08

  • Very yummy, my husband LOVES them. I add a bit of unsweetned cocoa powder to the dry ingredients to kick up the chocolate flavor. I roll some of the dough up and freeze it to bake later - just add two more minutes to the bake time for the frozen dough balls. - 6/2/07
